Thank you, Caroline. As I recall, your Campaign for Real Bread was in the early 1980s. I remember it well because Michael Bateman came and visited my little Village Bakery in Melmerby, Cumbria. I still have the recipe book you produced at the time and my copy has a Sunday Times cutting poking out of it. Big Bread is still hostile. Most recently they came up with their own ‘definition’ of sourdough (which of course allowed all their hidden additives and processing aids as well as little or no fermentation) because they didn’t like the Real Bread Campaign pointing out that they were deceiving the public by selling ‘sourdough’ loaves that were nothing of the sort. We call it ‘sourfaux’. Plus ça change!
